We love when our fans find creative ways to use their Mammoth Creameries keto ice cream in recipes! And we were MIND BLOWN when our friend Romie created these Strawberry Amaretto donuts to make the ultimate, flavorful, low-carb ice cream sandwich.

-1 cup almond flour ⠀
-1 tbsp coconut flour ⠀
-1/4 teaspoon xanthan gum⠀
-1.5 teaspoon baking powder ⠀
-Half teaspoon baking soda ⠀
-1 tbsp Simply Delish strawberry pudding mix ⠀
-Pinch of cinnamon ⠀
-1/4 cup macadamia nut milk⠀
-1 dropper full Ooo Flavors amaretto⠀
-1/4 teaspoon apple cider vinegar ⠀
-2 tbsp melted butter ⠀
-1/4 cup allulose ⠀
Whisk together eggs, macadamia milk, melted butter, allulose and amaretto flavoring. In a separate bowl mix flours, xanthan gum, pudding mix, baking powder, baking soda, salt and cinnamon. Then add dry ingredients to wet ingredients and mix well. I poured batter into a small silicone donut mold. I made 8 donuts. Bake at 350° for 15 minutes. Let cool before popping them out of the molds.
Heat the heavy whipping cream in the microwave just until boiling. Pour over the white chocolate chips. Let sit for 3 minutes and then stir in the black cherry jel powder. Dip the chilled donuts in the glaze and top with chopped pistachios!
Slice the donuts and sandwich your favorite Mammoth Creameries keto ice cream flavor in between the two slices. Enjoy!
